Coconut Rice Recipe


Ingredients:::::::

Parboiled Rice

Coconut Milk

Fresh Coconut

Clove

Onions

Green Onions

Salt

Black Pepper

Nutmeg




Boil Rice (season with a dash Nutmeg, salt, 2 clove) half way through

Grind (Use Blender) Coconut and combine juice with Caned coconut milk

Add coconut mixture to Half boiled rice

Add chopped green onions and Reg' onions (Optional::Toss in to release flavor)

Adjust seasoning

Simmer (low heat) for 15-20 min or till done.

I usually reheat rice in a microwave. So it doesn't dry out, I place a damp paper napkin over the open container. It kind of "steams" the rice a bit. Don't over-heat the rice as it will get really dry.
