I've finally perfected this recipe.. so I'll share..

Arroz con Pollo (Rice and Chicken) (serves 4)

1 Cup - Rice (Uncle Ben's preferably.. although any long grain rice should work)
1.5 cups of Chicken Broth (make yours or canned)
4 pieces of boneless skinless thighs (or breast)
1 medium sized Onion (chopped)
1 medium sized Green Pepper (chopped)
2 stalks of Celery (I normally add more) (chopped)
2 cloves of garlic (minced)
1 cup of Frozen Peas
1 can stewed tomatoes
2 tablespoons EVOO

Spices:
Salt and Pepper to your taste
A couple of strands of Saffron (very expensive, but a little goes a long way)
Sazon Goya (for color and taste)
1 Bay leaf

Season the chicken with salt and pepper..
Heat the oil and then brown the chicken. It doesn't get cooked, just gets a little color..

Remove the chicken from the oil and set aside. make sure there's still some oil left in the pan..
Add the onions, green pepper, celery and garlic.. saute for about 5 minutes.
Add the saffron, broth and stewed tomatoes and bring to a boil..
Reduce the heat. stir in the rice, the browned chicken, the sazon and the bay leaf..
Let cook COVERED until rice is almost done (sorry, I haven't measured the time)
Add the peas (you can thaw them a bit).. let cook for a bit until rice is dried out.. feel free to add water if it gets too dry..
remove the bay leaf and you're good to go..

enjoy!

I didn't really care for celery either.. but I've found myself cooking with it alot lately.. you can hardly taste it.. but yeah..feel free to omit whatever.. add whatever veggies you like to make it more chunky.. if you're gonna skip the saffron, don't skip the sazon goya.. add whatever spices that'll suit your taste.. I think I add some italian seasoning sometimes..depends on what I feel like

this is another recipe I love..
http://www.foodnetwork.com/food/reci..._37173,00.html

It looks and smells divine.. and you can eat it over anything..

you need a slow cooker though.. and I haven't tried making the rice yet..

A small serving of fries at McDonald's has 220 calories, while a large serving has 400 calories. If you eat large fries three times each week for a year, that's an additional 8 pounds of fat you're packing on your body. Ultimately, losing weight comes down to calories.

So what do u want to make? I picked up a new potato hash-type dish that can work for Brunch/lunch/dinner. I can also hook you up with a great recipe for bbq Turkey legs...u can also use it for Chicken if u like...I'm making a chili-bake casserole for dinner today, but I haven't tried the recipe out b/4 so I wouldn't want to give u that one. Or I could give u a lime flavored rice dish u can eat with a stir-fry of some sort...etc

Share some of your favorite dishes that are easy (i.e. quick) to make and not so typical. They can have the same ingredients, but you can share different ways to cook 'em as well as the recipe.
raviolli and risotto - they're both really easy to make and taste pretty good. and they're done in like 10 minutes!!
stir fries - any kind and have it with rice
cous cous is also a good alternative to rice which i wanna start experimenting with
pasta/spaghetti/macaroni - can't go wrong with that, you can always add whatever ingredients you want to vary the taste
rice noodles - same, can pretty much do whatever you want with 'em

...babasheri's recipes are also very handy

Tom Yum soup - Thai Soup

Tom Yum Instant paste
Shrimp- 1 cup or less depending on how much you like it.
mussels- 1/4 cup
mushrooms- about 1 cup or less if you dont like it that much
ginger- about 2 teaspoons
Chili- if you like pepper- u can use ground- I teaspoon or 5 small chilies (dont cut)

pretty much clean ur shrimp, mussels and mushrooms. Cut up your mushrooms, and peel your ginger and cut in pieces too.
put 3 cups of water to boil, once the water boils, put 2 tablespoons of tom yum instant paste in the water, and the put all the other ingredients in and let it boil down for 15 minutes.
PS: it is better with fresh shrimp.
