I've finally perfected this recipe.. so I'll share..
Arroz con Pollo (Rice and Chicken) (serves 4) 1 Cup - Rice (Uncle Ben's preferably.. although any long grain rice should work) 1.5 cups of Chicken Broth (make yours or canned) 4 pieces of boneless skinless thighs (or breast) 1 medium sized Onion (chopped) 1 medium sized Green Pepper (chopped) 2 stalks of Celery (I normally add more) (chopped) 2 cloves of garlic (minced) 1 cup of Frozen Peas 1 can stewed tomatoes 2 tablespoons EVOO Spices: Salt and Pepper to your taste A couple of strands of Saffron (very expensive, but a little goes a long way) Sazon Goya (for color and taste) 1 Bay leaf Season the chicken with salt and pepper.. Heat the oil and then brown the chicken. It doesn't get cooked, just gets a little color.. Remove the chicken from the oil and set aside. make sure there's still some oil left in the pan.. Add the onions, green pepper, celery and garlic.. saute for about 5 minutes. Add the saffron, broth and stewed tomatoes and bring to a boil.. Reduce the heat. stir in the rice, the browned chicken, the sazon and the bay leaf.. Let cook COVERED until rice is almost done (sorry, I haven't measured the time) Add the peas (you can thaw them a bit).. let cook for a bit until rice is dried out.. feel free to add water if it gets too dry.. remove the bay leaf and you're good to go.. enjoy!

Tom Yum soup - Thai Soup
Tom Yum Instant paste Shrimp- 1 cup or less depending on how much you like it. mussels- 1/4 cup mushrooms- about 1 cup or less if you dont like it that much ginger- about 2 teaspoons Chili- if you like pepper- u can use ground- I teaspoon or 5 small chilies (dont cut) pretty much clean ur shrimp, mussels and mushrooms. Cut up your mushrooms, and peel your ginger and cut in pieces too. put 3 cups of water to boil, once the water boils, put 2 tablespoons of tom yum instant paste in the water, and the put all the other ingredients in and let it boil down for 15 minutes. PS: it is better with fresh shrimp.
