Alright so you have a get together with say 20-25 people.
What sort of food/snacks will you make?

Recipes/ Pictures please

Puff-puff
Plantain/pepper/meat strips combo.
jollof rice (of course!)

Alhaji, Nimo, Sophia, Funred, classyamebo looking forward to your contributions

well...first of all...is it an all Naija crowd/mixed?
is it going to be formal/ or casual?

off the top of my head..
you want to have meat...so a party favorite which is easy to make are CHicken wings (lots of them)
or you could do a pot/pork roast..so you can just slice it up and have them pick up slices
You can do Jollof rice, or whatever you want the main starch to be
Corn on the cob has always been a winner for me
I did rib-tips for hubby's b-day....we had about 30 people and the loved them ..I also made a Large Salmon on the grill and chicken legs..that way I covered the non-red meat eaters

FYI!

fruits(Each fruits should be in toothpick. E.g, u can put a slice of pineapple,grape, canterloupe on same toothpick. u just have to be creative.)
cocktail meatpie
buffallo Wings/blue chesse dressing
Chesse(different types), pastrami/crackers/salamis
Shrimp Cocktail
lettuce wrap(Lettuce wrapped in well seasoned chopped up stir fry chicken breast and sauce)
(u can also add some very fine julienne carrots)
fried mozzarrella sticks

Rum Punch(great stuff)
Home Made iced tea(not the already made lipton powder)
other drinks

Soup(Pepper Soup or chicken soup, or seafood tomatoes soup)

Garden salad(Please refrain from using iceberg lettuce. U can add orange, grape tomatoes or sundried tomatoes and bell pepper for color. try to make ur own salad dressing(try citrus, vinaigrette)).
Stir Fried Veggie
Macaroni salad
Jollof rice or Rice/peas and curried goat
Fried Chicken( I will do a very small amount of naija style(hard chicken) and the rest will be the reqular fried chicken coated in flour)
Maple glazed Salmon(Fillet)
Steamed Fish(Individually wrapped. Jamo Style)
Fried Fish sauted in tomatoe sauce or Fried fish sprinkled with vinegar/onion/hot pepper dressing or u can set the dressing aside for those that dont like it spicy-
Fried goat meat
Jerk chicken or Pork(I try not to cook pork for occasions. alot of people dont eat pork and some will not like to eat any food once they find out that pork is among the food choices)
Like Funred said-->Roast Beef

cake(tomatoe soup cake, sweet patotoe cake or whatever cake that u like)
pies(Apple etc)
Ice Cream
Strawberries covered in chocolate dipping placed in toothpicks.
Custard

Tea--> I am a tea lover--> It will help ur guest to relax and digest all the concoctions

N.B

Also try to play around with different colors(mix and match different type of veggies and also herbs) . Remember, the presentation of the foods is one of the keys to making a great impression in ur party.

Suya.... with real suya spices from naija... I made for my dad's birthday



Briskets from Walmart (with a little bit of fat)
Suya spice (direct from Naija)
Cut meat into thin pieces (kinda like fajita)
Get a large bowl and mix dry spice and salt (easy on the salt cos the spices sometimes come with salt)
Add meat.. use your hands to mix/marinate it.
Add a little bit of vegetable oil... (Enough to seal in the spices, it also helps in keeping meat moist)
I use my oven sometimes but this time I used an outdoor grill....
Set the coal on fire and let heat till there are no flames.. (NO FLAMES.. very important)
Use bamboo skewers to skew the meat... and place on the grill (cover it)....

You'll hear sizzling here and there... turn to the other side after about 5 mins... (about 10 mins cooking time).

looks scrumptious! did you grill them or do them in the oven..I've made it a couple of times, but sometimes it ends up being dry.. I guess I've got to continue to baste them with oil or so,ething
