Hey Alhaji,
Great work! I followed your curry chicken, moin-moin and goat meat recipes (with very little modifications) as part of the menu we had for a get-together this weekend. Just thought I would share with pics. ![]() ![]()

Sorry for the slow response y'all........
Suya....... Ingredients finely-ground roast peanuts, shelled and de-skinned cayenne pepper tsp paprika tsp salt tsp ground ginger tsp garlic powder tsp onion powder meat ( Flank steak, Skirt Steak, chicken, lamb etc) cut to prefered sizes onion, peeled and cut into chunks maggi (Optional) Suya Rub (I used Skirt steak) mix spices and peanut powder (Grind/blend in a blender or food processor) Dip and roll the meat in the contents of one bowl, making sure that the meat is completely coated. Allow the meat to marinate in this mix for at least half an hour then place the meat on skewers. Cook under a grill or on a barbecue and sprinkle with the reserved peanut mix. Ok to baste with Garlic and Italian seasoning scented Olive oil. @Jummalo, I'm not hiding now.......lol @Missy, let me know when you're ready.... alhaji

I marinated the meat with olive oil and the spice mixture for over 6 hrs, but I didn't get that suya taste after I brought it out of the grill. It just tasted really tangy and spicy. I guess next time, I'll have to use 'roasted' peanuts as opposed to 'non-roasted'. Thanks Alhaji...continuez le grand travail!

Egusi With Fresh Pounded Yam.........
![]() Meat/s. Cut to preference. Tomato Onion Salt Black pepper Garlic Red bell pepper Habanero or Scotch bonnet Ground Egusi Olive Oil Palm Oil Spinach (Cut to preference) Maggi (Optional Because of MSG content) Cut and boil meat's (Boil smoked fish together with meats to enhance flavor) Blend or grind tomato, onions, garlic, habanero and red bell pepper. Add the meat (and/or fish) to a large pan with a little water, bring to a boil then simmer until done (about 20 minutes). Add equal quantity of palm oil and olive oil to a pot. Add egusi (Optional/could be added later)I think frying enhances the flavor. Add the blended mixture and let fry for 5 mins. Add beef stock or water. Add salt, and black pepper. Let boil for 10-15 mins (medium heat) Add cleaned and cut spinach Let simmer for 15-20 mins or till done/thickened. Serve and eat with pounded yam, eba, amala, rice and beyond............ Enjoy alhaji

alhaji interesting tip, I will try your method sometime, I usually start with the blended pepper, then spinach then egusi, so I will try this method
