Hey Alhaji,

Great work!

I followed your curry chicken, moin-moin and goat meat recipes (with very little modifications) as part of the menu we had for a get-together this weekend. Just thought I would share with pics.

Thanks Nflow.

That meat dish was meant to be 'suya'.

I attempted to make the suya spice from scratch, but the final result was that it didn't taste like suya

Sorry for the slow response y'all........

Suya.......

Ingredients

finely-ground roast peanuts, shelled and de-skinned
cayenne pepper
tsp paprika
tsp salt
tsp ground ginger
tsp garlic powder
tsp onion powder
meat ( Flank steak, Skirt Steak, chicken, lamb etc) cut to prefered sizes
onion, peeled and cut into chunks
maggi (Optional)

Suya Rub (I used Skirt steak)

mix spices and peanut powder (Grind/blend in a blender or food processor)

Dip and roll the meat in the contents of one bowl, making sure that the meat is completely coated. Allow the meat to marinate in this mix for at least half an hour then place the meat on skewers. Cook under a grill or on a barbecue and sprinkle with the reserved peanut mix.

Ok to baste with Garlic and Italian seasoning scented Olive oil.

@Jummalo, I'm not hiding now.......lol

@Missy, let me know when you're ready....

Alhaji you're always invited..whenever you are in the vicinity of western Europe, hollaa

1st column- shrimp spring rolls, moin-moin, 'suya'
2nd column- diced plantain, coleslaw, roast potatoes and chicken
3rd column- Thai pan fried noodles, goat meat stew, coconut white rice
4th column- Fried rice, cat fish stew, curry chicken

I made the suya spice like you described above, except I used peanut powder (non-roasted) that I bought from a Pakistani store. I marinated the meat with olive oil and the spice mixture for over 6 hrs, but I didn't get that suya taste after I brought it out of the grill. It just tasted really tangy and spicy. I guess next time, I'll have to use 'roasted' peanuts as opposed to 'non-roasted'.

Thanks Alhaji...continuez le grand travail!
