I made this last night. they all loved it.

Fried apples, mushroom stuffed in chicken and ofcourse onions! yum

Thai Chicken Curry

Chicken breasts or Leg Quarters

For 4

INGREDIENTS

4 Chicken breasts or 6 Leg Quarters
Olive Oil
Onion
Garlic paste
Tomato
1 tbs Tomato puree
Dried coriander
6 Red chilli: seeded
Fresh lemon grass
2 cloves
Italian seasoning
Sage (1 dust)
Rosemary
DIRECTIONS:

Flash fry chicken in Olive oil (Just to brown and seal in flavor)
Add onion, tomato, chilli, garlic, cloves, rosemary, T/puree, sage, cayenne pepper and Italian seasoning.

Add fresh chicken broth (2 cups)

Cook for 5-10 mins (med: heat)

Add lemon grass, adjust seasoning and simmer for 20-30 mins

Optional: Add coconut milk and or thicken with corn flour.
