now this brought up nostalgic memories, havent had shrimp in Velouté sauce since my francophone days! Its a "grand sauce", how do u make urs? The basic one i know consists of chicken stock butter, flour, white/black pepper. some folks used dry vermouth, and heavy cream.
Now Velouté with escargot (snail), cooked with white wine and cream cheese is a must have!!

Oh i'm bout to make me some next week!
