Hi istidele

You really can't. You need fresh water yam, using potatoes basically means fried potato.

You can put the cocoyam in and remove it once the soup has reached the required thickness. As long as you don't over stir. Bitterleaf soup isn't usually so thick.

I actually love bitterleaf soup and I don't mind boiling coco yam on the side and eating it with the soup....I just don't fancy coco yam in soups, especially as a thickening agent. It's of course a personal thing, nothing professional.

The only thing we use yam as a thickening agent for is peppersoup. But I guess different areas, difference recipes.
