It tasted different because I enhanced and created extra flavors and dimensions. I didn't disturb the basic ingredients though.

Ingredients..

Cow Foot (1 pound) Boiled and deboned)

4 tbs palm oil + 2 tbs Olive Oil

1 chopped habanero

Edible potash (Akanwu)

Onions

Onion Powder

1 garlic clove (chopped)

Ground Crayfish

Utazi or Bitter leaf

Blended crayfish (1 cooking spoon)

Salt

Black pepper

1/2 teaspoon Italian seasoning

Half cup water/beef stock or Maggi (I didn't use Maggi because I try not to cook with MSG)

Method..

Heat up your oil @ med heat

Add chopped onions, habanero, garlic

Let fry for about a min or 2

Add water or stock

Add Potash/Akanwu, Utazi and cray fish.

Adjust seasoning with salt, paprika onion powder and Italian seasoning

Add cow foot

Gently mix everything together and simmer till done

Adjust seasoning ass needed.

The Idea is to create a tender/not so tender spicy cow feet dish with deep flavor.

I love Nkwobi, it's a simple and unpretentious spicy dish with tons of flavor.

This is definitely not my last take on it.

lol. Sounds good to me. Hope u fit hold off be till the end of summer/cause I wont be back in California till the end of summer.

My contract is good till August and the folks I work for rakes in 70% of their cash during the summertime.

Most of the ingredients are not hard to get, especially cow foot, the only exotic ingredients are Utazi/Bitter leaf and Potash/Akanwu and most Naija stores carry them. Try your local Naija store.
